Davila, whose family has operated Davila's BBQ in Seguin for decades, says he was thrilled to be hired to serve as one of the judges for the program.
"I was contacted by the Travel Channel on a show that was in current production...in April and we filmed it in May in Austin. They show is kind of on the platform of -- sort of a 'Chopped' format, but the uniqueness of the show is that it switches cities each episode. So the scenery is outdoors, everything has to be grilled and so with outdoors, it changes every week. So that makes it a little more unique to a lot of these shows that have the same sort of format. I was invited to be the guest local Texas/Austin judge. That was the only Texas episode that was filmed for this series. So it was pretty important to be called up on that," said Davila.
Davila got connected to the show thanks to his work with Quail TV, a production company that has relationships with a number of networks. He says it's thanks to that relationship that he was asked to serve as a judge, and to provide a little local flair to the broadcasts.
"The local judge...on each episode is more to be able to give the audience insight on local ingredients, the culture, really give a lot of insight to the viewers on where they are at each episode. They go to different parts of the country, all around America, because America has such a big grilling culture, so they go to all of these cities. Each one has a local judge and I was the Austin local Texas insider so to speak," said Davila.
"We met with the producers the night before. They definitely hammered in that they wanted me to talk about Austin, and Texas, and the culuture, and what it means for our restaurant at Davila's. I don't know what all made the cut, we haven't seen any of the footage, of course. That's all kept under tight wraps," said Davila.
Davila says its been a great experience, and he's thankful for this opportunity to share his passion with the viewers.
"I really enjoyed the experience, but I absolutely appreciated and I'm humbled by it, because (of the) other judges on the show. If you look at the other episodes, there's some pretty big names in the industry. So I was pretty honored by that, just to be in the same boat, the same authoriative voice as those guys and women out there," said Davila.
American Grilled airs at 8 p.m. Wednesdays on the Travel Channel.
